I don't know about gvfs-fuse, but sshfs I think should be upgraded.  I did it by simply manually telling apt to install it: 'apt install sshfs'.  I think it replaces some older fuse packages.

For most people the update of gfvs-fuse (older version depends on package fuse, newer version depends on package fuse3 ) worked just smooth, some have problems for whatever reasons, so had I. What I did several days ago.:
 - first let gvfs-fuse go  (Version <= 1.42.1)
 - then replaced fuse with fuse3 through reinstalling gvfs-fuse (Version now 1.42.1-3)
Worked for me ;). Just in case, see  https://bugs.debian.org/cgi-bin/bugreport.cgi?bug=943875

OK.. By installing the new sshfs by just install it over the old one a finotti suggested fuse was replaced by fuse3.

After that d-u doesn't complaining about anything adn I will go on with that now.
Thanks finotti and der_bud

Edit: back after D-U without problem
